1. Yogurt Parfait - I gave you a sneak peak of this in my post "Hemp Hearts and Steel Cut Oats." All you need is 1/2 cup of Kashi (my favorite is Go Lean) found in the cereal aisle, 3/4 cup of PLAIN fat free greek yogurt (Costco's Kirkland brand is very good) and 1/2 cup of berries. I prefer strawberries, as they are in season.

2. Steel Cut Oats - making this type oatmeal every morning takes at least 20 minutes, time most of us don't have. Well I dont, I like to sleep. My PTNB told me to make a big batch on a Sunday night and keep it in the fridge for the week. Brilliant! I cook up Bob's Red Mill steel cut oats (eat 1 cup), then add in some Manitoba Harvest Hemp Hearts (eat 1/2 tbsp) and golden raisins (10 of them per serving). For extra protein I like to add a tbsp of almond butter. And of course warm it up and add a bit of milk. My PTNB recommends almond milk.
3. Lonely Yolk Burrito - I just tried this one today. And it was good. Marek even said "Wow. Tasty." Incredible! He liked something that wasn't ice cream. Scramble up three eggs but only use one yolk. Throw it on to a warmed wheat tortilla (I prefer the Weight Watchers brand) and add some veggies. Today I did low-fat cheese, tomatoes and a spinach/kale medley.

I hope you enjoy these recipes. Please comment and share any of your favorite and healthy breakfast foods with me. I am always looking for ideas.
My two favorite breakfasts are:
ReplyDeleteProtein Pancakes:
1/2 cup egg white
1/4 cup cottage cheese
1/2 cup oats (dry)
1 scoop protein powder (usually vanilla)
Blend it all together in a magic bullet and pour it into a pre-heated non-stick frying pan
When able to (trial and error)- use a rubber spatula and flip 'er over
When both sides are done either use Sugar Free Syrup (30 cal for 1/4 cup) or thawed frozen berries as a topper

For those not looking to get huge muscles like I am this could be shared for two people :)
My favorite meal when on the go is:
1/2 - 1 cup frozen berries
1/4 cup oats (dry)
1 cup spinach
3/4 cup egg white (YES raw egg whites - no joke there is no taste)
1/2 cup soy or almond milk
Blend up in a magic bullet and run out the door. I promise that all you will taste are the berries and yet get so much other nutritional benefits from it!

Those protein pancakes sound delish! Marek is going to go buy some protein powder for me from Costco. Any recommendations?
DeleteThe vanilla protein i use is actually from Costco. I am not sure what the brand is but it is in a white tub
Deleteanother convenient morning tip for oatmeal: use a rice cooker, just turn it on when you get up and it will be ready once you are done getting ready.
